Preparation Instructions Mix cornflour to a smooth paste with cold water before using with other liquids. Always simmer for a couple of minutes before serving to ensure the cornflour is cooked. Hints and Tips Ideal for thickening soups, casseroles, gravy and sauces. Makes cakes softer and lighter. For sponge cakes and shortcrust pastry use 1 part cornflour to 3 parts flour and sift 3 times before using. For fruit cakes use 1 part cornflour to 7 parts flour.
