Metric %: 100, Basic Recipe: Dry Mix, Part Case Grams: 3,000, Full Case Grams: 12,500 Metric %: 45, Basic Recipe: Water, Part Case Grams: 1,300 (1.3lts), Full Case Grams: 5,400 (5.4lts) Metric %: 13, Basic Recipe: Fruit, Part Case Grams: 390, Full Case Grams: 1,600 Total Weight: Part Case Grams: 4,690, Full Case Grams: 19,500 Method For Scone Mix 1. Place the dry mix into a bowl fitted with a beater. 2. Add water over 1 minute on slow speed. Scrape down. Mix for a further 1 1/2 minutes on slow speed. Rest for 10 minutes. 3. Pin out and rest for 5 minutes. Cut out scones. For Immediate Use 4. Rest for 15 minutes. 5. Bake at 225°C(435°F) for approx 15 minutes. For Freezing 4. Put in freezer immediately. 5. Defrost for 1 hour before baking 6. Bake from frozen at 225°C(435°F) for 15-20 minutes. N.B. These directions are based on a 20 quart machine. Make usual adjustments for other sizes.
