1.) Heat gently until the preparation begins to boil (85°/185°F).
2) Arrange the dishes and leave to stand for 20 mins at room temperature.
3) Place in the fridge for at least 1 hour.
4) Sprinkle with brown sugar and caramelise with a blow torch or caramelising iron just before serving.
