Basic Recipe Meri-White Mix: Meringues 85g (3oz), Cold Water: 570ml (1 pint), Sugar Type: Granulated 1.14kg (2lb 8oz) Meri-White Mix: Royal Icing 85g (3oz), Cold Water: 570ml (1 pint), Sugar Type: Icing 3.2kg (7lb) Meringue Make-Up Instructions 1. In a grease free mixing bowl mix together the Meri-White and cold water using a whisk. 2. Make sure the Meri-White has completely dissolved. 3. Add the sugar in a steady stream whilst whisking on high speed. 4. Continue whisking until a full peak is obtained. 5. For best results, slow dry the meringue in an oven which is pre-heated to 90°C, and leave for a few hours (or overnight) until completely dried. Royal Icing Make-up Instructions 1. In a grease free mixing bowl mix together the Meri-White and cold water using a k- beater. 2. Make sure the Meri-White has completely dissolved. 3. On slow speed, gradually add the sieved icing sugar, until a firm peak is obtained. 4. Use as required.
