Green peppercorns in brine have a mild peppery flavour and are preserved in brine to retain their texture, colour and flavour.
Blend with softened butter to flavour cooked beef, duck pork and vegetables. Add to rich gravies for beef, lamb and game. Add to pan fried steak with cream and brandy for classic steak au poivre vert. For a Jamaican-style dessert, add to pan fried bananas with spiced rum and double cream.
